Opal,Pastor Leon's wife, spent the afternoon making a Mayonnaise Cake with peanut butter frosting for the pot luck dinner after the evening service. They've become family to their parishioners since their arrival two years ago. They feel blessed to live in a community where a helping hand is always ready.
This is an old, old recipe and if you've never heard of it before, the name will probably be a turn off. But, Opal is going to share it anyway. I have to admit that this is my families favorite cake. It is a very moist chocolate cake with delicious peanut butter frosting.
"Mayonnaise Cake"
1 Cup Mayo
1 1/2 Cup Sugar
2 Heaping Tablespoons Cocoa
1 Cup Hot Water
2 Cups Flour
2 Teaspoons Baking Soda
2 Teaspoons Vanilla
Sift dry ingredients together. Mix mayo, hot water and vanilla. Add to dry ingredients and beat by hand. Bake at 350 degrees for 25 minutes. Allow cake to cool before frosting.
"Peanut Butter Frosting"
3/4 Box Powdered Sugar
1 Stick Butter
1/2 Cup Peanut Butter (I use about 2/3 Cup)
Add a little milk until desired consistency.

Looks like it might be an early fall here in Western Pa. and your autumn paintings take me back to those bright blue October days of my childhood growing up on the farm! I love those autumn paintings!

Melissa, When I serve it, I don't usually tell people the name of it. They don't realize it just moistens the cake.
